Vegetable Shepherd’s Pie

St. Patty’s Day is right around the corner. One of my traditions is to make Shepherd’s Pie. This year, I am on a diet so I am going to try a meatless option. Want to try it too? Here is your shopping list.

  • 6 medium Yukon gold potatoes,
  • Kosher salt
  • extra-virgin olive oil
  • 1 large onion,
  • 3 large carrots,
  • 2 stalks celery,
  • 1 bunch baby turnips,
  • 6 cloves garlic,
  • Freshly ground pepper
  • bunch fresh parsley,
  • Worcestershire sauce
  • unsalted butter
  • veggie burgers or vegetarian protein crumbles
  • milk or half-and-half
  • Grated Parmesan cheese,
